Sohrab's Burger

Burger season is all the time. That’s why, when Sohrab and I had a craving recently, we decided to make our patties from scratch rather than scouring the outside world for a cure. What could I say when we found perfect little gluten-free hamburger buns in the freezer aisle at Whole Foods? I didn’t have the strength to say no. Finding a good gluten-free bun is a challenge that has taken us across Los Angeles in hopeful search. And yet, they were right there, in our neighborhood grocery, waiting for us this whole time. Who knew?

Whether you have a grill on your porch or a Foreman in your kitchen, you’re ready to make delicious burgers all your own. This is a ridiculously easy recipe, so you’ll have dinner set in no time. Find some delicious ground beef (with the least amount of fat you can manage – we go for an organic 85% lean from Costco) and your favorite hamburger buns. Chop up half an onion and two cloves of garlic, add a few shakes each of sumac, salt, and pepper, and combine them with the meat with your hands in a bowl. Once that’s set, divide the meat into four and prep to set them on the Foreman or BBQ and cook to your liking! Sohrab prefers a few more toppings than I do on his burger (or as he would put it – taste), so his is in sharp contrast to mine in the end:

No shame. This was freakin’ delicious. I find that I can enjoy the taste of my burgers much more when there’s less on them to distract me from it. Clearly, Sohrab would disagree. How do you like your burgers?
