Banana Streusel Muffins

Food is more fun in muffin form. Sohrab laughs at me, because of course I would say that. But I’ll have you singing this tune soon enough once you’ve tried these yummy from-scratch banana streusel muffins!

If you’re not a regular consumer of bananas, it’s time to get to the store and buy a bunch, because you’ll need three for this recipe. I had what I needed lying around, since Sohrab LOVES bananas (I don’t. Sorry, not sorry). What keeps me from enjoying this particular fruit is its texture – I just can’t get over the mush. That’s why these muffins work for me! I get the taste (much like banana bread) but none of the mush.

Got your bananas? Make sure you have this stuff, too:

For the streusel topping

  • 2.65 oz room temp butter
  • 2.65 oz flour
  • 2.65 oz brown sugar
  • .20 oz ground cinnamon
  • 2.65 oz rolled oats

For the muffins

  • 2.65 oz melted butter
  • 3 bananas (I know, you knew that)
  • 5.30 oz sugar
  • 1 egg
  • 6.35 oz flour
  • .20 oz baking powder
  • .10 oz baking soda
  • .05 oz salt

You might have noticed that these measurements are by weight rather than volume. The reason? It’s one of my favorite (and one of the best) ways to measure out your ingredients. It allows you to be more precise, and therefore get a better end result! My preferred kitchen scale? Drop, of course! It’s the kitchen scale of the future. For real.

So. Once you’ve gathered your ingredients, it’s time to get mixing! Get out a small bowl for the streusel, adding each of the yummies in turn. Mix it together until it looks like a glorious, clumpy mess.

Melt the butter for the muffins while mashing your three bananas into another bowl. Add the sugar and egg, then once that’s all mixed up, add the melted butter.

Grab yet another small bowl (yes, I know) and mix together the flour, baking powder, baking soda, and salt. Once that’s combined, you can add it to the banana batter. Looking good yet?

Bust out your muffin tin, spray it with coconut oil, and fill each well about 3/4 of the way. Once they’re all ready to go, top each one with as much streusel as you’d like. Go ahead, go crazy! The more the better!

Banana Streusel Batter

Bake those suckers in a 340° F oven for 25 minutes, or until you can stick a knife in one and have it come out clean.

Try not to burn your fingers while eating these as quickly as possible! They are perfect for a grab and go breakfast, or a sweet treat with your afternoon tea or coffee. Yum!
